Week in Food: 2.4 and 1.27 follow up.
Well, my non-cooking husband really stepped up to the plate last week when things at work were crazy and really did a great job getting dinner either completely made (or at least prepped so I had to do minimal work when I finally got home).
With that in mind, we’ve got another easy week’s worth of dinners because this week is going to be equally crazy.
Tonight (meatless Monday): Spinach ravioli from Costco with homemade marinara from the freezer (come to think of it, I hope there is a bag left in there!) and salad.
Tuesday: Thai Spicy Basil Chicken over a salad of lettuce, cucumbers, tomatoes and cilantro.
Wednesday: Meatloaf (I can throw together the night before for Mike to put in the oven), roasted brussels sprouts.
Thursday: Seared tuna with avocado, soy, ginger and lime.
Friday: Homemade pizza with turkey sausage, peppers, mushrooms and onions.
Last week:
G’s famous chicken + mushrooms. Always super easy and really delicious.
Little steaks with horseradish butter, roasted sweet potatoes and brussels sprouts. Mike did a great job cooking the steaks. He misread 5 tsp. of butter for 5 TABLESPOONS, so we had only mild-ish horseradish butter for days. We added more horseradish, and if made per the recipe, I bet this is really fantastic.
Our fave crispy black bean tacos. Always super easy and delish.
Veggie pizza with peppers, onions, spinach and mushrooms. Mike makes better pizza crust than I do. Who knew?!
